Quick & easy cabbage soup that’s healthy AND delicious

By JugglingNothing on

I tried this really simple cabbage soup from Healthy Delicious the other day and it turned out so comforting and flavorful that I had to share. If you’re into easy weeknight meals that are low‑carb, gluten‑free, and dairy‑free (but still warm and tasty), this one’s worth bookmarking.

Here’s the gist of the recipe:
Ingredients:
Olive oil
1 small sweet onion, chopped
3 garlic cloves, minced
8 cups low‑sodium vegetable broth
1 can (14.5 oz) plum tomatoes, chopped
About ½ small head cabbage, sliced
3 carrots, sliced
3 celery stalks, sliced
Italian seasoning, salt & pepper
Chopped fresh parsley (optional)

Steps:
1. Heat olive oil in a big soup pot over medium heat.
2. Add onion; cook until soft. Toss in garlic for a minute.
3. Add broth, cabbage, carrots, celery, tomatoes, and Italian seasoning.
4. Bring to a boil, then reduce heat and simmer about 30 min until veggies are tender.
5. Stir in parsley, adjust salt/pepper, and you’re done!

Tips / Variations:
- Add a can of beans (chickpeas or white beans) for more protein.
- Brown some ground beef or turkey with the onions for an “unstuffed cabbage roll” vibe.
- Throw in extra veg you have on hand (kale, green beans, peas).
- Freeze leftovers in portions — great for meal prep.
