Quick & fresh spicy rice noodle salad with smoked mackerel (super easy)
By Charlotte on
Wanted to share a simple recipe I tried that’s fast, healthy, and full of flavor. Think bright, spicy dressing + cool veggies + smoky fish on rice noodles. Perfect for lunch or dinner.
Ingredients (Serves 2)
Rice noodles (about 120g/4–5 oz)
2 smoked mackerel fillets (peppered kind if you can find them)
1 carrot, cut into thin matchsticks
½ cucumber, cut into matchsticks
1 spring onion, sliced
80g edamame (or peas)
Fresh cilantro/coriander
For the dressing:
1 tsp tamari (or low-sodium soy sauce)
Fresh ginger, grated (about a thumb-size piece)
Juice and zest of 1 lime
1 tbsp honey
1 red chili, finely chopped (you can skip the seeds if you want less heat)
Salt to taste
How to make it:
1. Cook the rice noodles according to package directions. Rinse them under cold water and let them cool.
2. Whisk together the tamari/soy, lime juice + zest, honey, grated ginger, chopped chili, and a pinch of salt to make the dressing.
3. In a big bowl, add the cooled noodles, carrot, cucumber, spring onion, and edamame. Pour the dressing over it and toss everything together.
4. Divide the salad into bowls and flake the smoked mackerel on top. Scatter some fresh cilantro/coriander over everything and you’re ready to eat.
Why it’s great:
Ready in about 20 minutes
Tons of fresh texture (crisp veggies + soft noodles)
Light, bright, but satisfying with the smoky fish
If you try this, let me know how you tweaked it. I’m thinking next time I’ll add some chopped peanuts or a splash of sriracha.
