I stopped missing croutons once I found these gluten-free alternatives
By Eli Mercer on
One of the first things I noticed after going gluten-free was how much I missed the crunch in a good salad. The vegetables were still fresh, the dressing was still flavorful, but something was missing.
For a while, I tried eating salads without any crunchy topping, and honestly, they felt a little boring. Then I started experimenting.
My favorite discovery was roasted chickpeas. They add a satisfying crunch, hold up well under dressing, and bring extra protein to the bowl. They're especially good on Caesar-style salads or mixed greens with grilled chicken.
Another surprisingly good option is crushed corn chips. They add texture, a little saltiness, and work really well in taco salads. When I want something lighter, I reach for pumpkin seeds or sliced almonds. They add crunch without overpowering the other ingredients.
If you enjoy cooking, homemade gluten-free croutons are worth trying too. I cube leftover gluten-free bread, toss it with olive oil, garlic powder, and a little Italian seasoning, then bake until crisp. It takes only a few minutes and gives me the closest thing to traditional croutons.
Lately, one of my favorite lunches has been a salad with mixed greens, avocado, grilled chicken, roasted chickpeas, and a handful of pumpkin seeds. It has plenty of texture, keeps me full, and I never find myself missing regular croutons.
Going gluten-free often pushes us to get creative, and sometimes those new ideas end up being even better than the original.
