One simple gluten free quinoa bowl I keep coming back to
By JugglingNothing on
When I started focusing more on gluten-free eating, one of the biggest changes I noticed was how quickly processed foods could take over meals if I wasn’t intentional. Low fiber meals didn’t keep me full for long, and energy levels would dip faster than expected.
That’s when I started relying more on simple whole foods like quinoa.
What I like about quinoa is that it doesn’t feel like a “diet food.” It’s naturally gluten free, but it also brings real nutrition to the table. It has complete plant-based protein, decent fiber, and it actually keeps you satisfied in a way a lot of refined carbs don’t.
One of my easiest go-to meals with it is a simple quinoa bowl.
I cook quinoa in lightly salted water or broth until it’s fluffy, then let it cool slightly. After that, I mix it with whatever I have on hand. Most days it ends up being something like cucumber, tomatoes, olive oil, a squeeze of lemon, and a bit of salt. If I want more protein, I’ll add grilled chicken or chickpeas.
It’s not complicated, but it works every time. It’s filling, easy to digest, and I don’t have to worry about gluten sneaking in from processed ingredients.
Sometimes I also switch it up and make it more breakfast-style with banana, nuts, and a drizzle of honey. It’s surprisingly good warm or cold.
For me, quinoa became less about “healthy eating trends” and more about having a reliable base that makes gluten-free meals easier to build around.
