Quick one-pot braised beef brisket with potatoes and carrots

By JugglingNothing on

Made this tonight and it was ridiculously simple. - 2–3 lbs beef brisket
- Potatoes and carrots, roughly chopped
- Salt, pepper, garlic, herbs
-1 cup beef broth

20 minutes of active prep: season the meat, chop veggies, throw everything in a pot, cover, and simmer for 2–3 hours (or low in the oven).

Served with rye bread and butter. Minimal cleanup, maximum comfort. Perfect for a weeknight when your brain is fried but you still want a hearty meal.

Highly recommend for anyone who wants a cozy, hands-off dinner without losing flavor.
