I told myself I’d eat more veggies this year and I’m actually doing It

At the start of the year, I made a quiet promise to myself: I was going to eat more vegetables. Not a dramatic reset. Not a strict diet. Just… more veggies than last year.

Cooking already takes a lot of energy for me, so I knew this had to work on low-effort days too. I didn’t want to change what I eat, I just wanted to adjust it.

It started small. One night I threw some frozen broccoli into a pot of pasta because it was already in the freezer and I didn’t have to think about it. Another day I roasted carrots and bell peppers on a sheet pan and kept eating them all week because they were already cooked and predictable. That became my thing cook once, reuse often.

I stopped forcing myself to eat vegetables I don’t like. If green beans and sweet potatoes work for me, that’s enough. I’ll mix spinach into rice at the very end so it wilts without changing the texture too much. I’ll blend veggies into sauce so they’re there without being overwhelming.

Most days, my meals look the same as they always have. Mac and cheese, tacos, eggs, pasta. They just have something green or orange added now. That’s it.

It doesn’t feel like a “health journey.” It feels like learning how to take care of myself in a way I can actually sustain. Some days I forget. Some days I do better. But overall, I’m eating more vegetables than I was before, and that feels like progress.
