The "special" dinner I couldn't wait for... until I grew up and understood why we had it so often
By Charlotte on
As a kid, one of my favorite nights was breakfast for dinner.
The second I smelled pancakes cooking, I knew it was going to be a good evening. We'd grab the syrup, argue over who got the biggest stack, and happily clear our plates.
Back then, I thought it was just a fun family tradition.
It wasn't until years later that I realized those dinners were also one of the easiest ways for my parents to feed everyone without stretching the grocery budget too far.
Looking back, I'm amazed at how they made simple ingredients feel like a treat. We never felt like we were missing out because they turned ordinary meals into something we genuinely looked forward to.
Even now, I still make pancakes for dinner once in a while.
Not because they're inexpensive, but because they remind me that some of the best meals have very little to do with the price of the ingredients.
The same goes for grilled cheese and tomato soup, baked potatoes loaded with toppings, macaroni and cheese, or beans and cornbread. They started as budget-friendly meals, but somewhere along the way they became comfort food.
Funny how childhood changes your perspective.
The meals I once thought were "special" were actually my parents doing everything they could to make sure we never felt like we had less.
Now they're some of my favorite memories.
