I Didn't Expect This Egg Recipe to Be So Good, but Now I Make It All the Time*

By Real Ray C on

I'm always looking for meals that take almost no effort but still taste like I actually planned dinner. This one surprised me. It starts with four hard-boiled eggs. After peeling them, I slice them with a piece of clean cotton thread instead of a knife. It sounds odd, but it gives really clean slices without breaking the yolks apart. Then I lightly pan-fry the egg slices until both sides turn golden. That extra step makes a huge difference. The edges get slightly crispy, and the eggs pick up a lot more flavor. While the eggs are cooking, I sauté minced garlic with chopped green and red bell peppers until everything smells amazing. The eggs go back into the pan with about 2 tablespoons of light soy sauce, 1 tablespoon of oyster sauce, a pinch of salt, and a little chicken bouillon seasoning if I'm using it. After a quick stir, dinner is basically done. I usually serve it over a bowl of hot rice, and it's one of those meals that tastes far more satisfying than the ingredient list would suggest. It's inexpensive, comes together in about 20 minutes, and uses ingredients I almost always have at home. What's your favorite "lazy day" recipe that always turns out better than expected?
