This Sweet-and-Savory Summer Sandwich Is My New Go-To Lunch
By Charlotte on
When it's 90°F outside, I'm not interested in cooking a big lunch.
I just want something fresh, filling, and ready in about 10 minutes.
Lately, I've been making a sandwich that sounded a little strange at first but completely won me over.
I toast a couple of slices of rustic bread, then layer on ham, thin slices of crisp apple, and creamy Brie. If I'm in the mood, I'll spread a little Greek yogurt on one slice and a thin layer of peanut butter on the other. Then I finish everything with a drizzle of honey and a handful of chopped walnuts or pecans.
The combination is surprisingly good.
The apples bring a fresh crunch, the ham adds a savory bite, the Brie is rich and creamy, and the honey pulls everything together with just the right amount of sweetness. The nuts add a little crunch that makes every bite even better.
It's one of those lunches that feels a little fancy without taking any real effort.
I've found that the best summer meals are often the simplest ones. Good ingredients, a few minutes of prep, and you're done.
