What’s Your Favorite Big-Batch Dinner That’s Actually Better as Leftovers?

By Eli Mercer on

I cook for two, but I've realized that making a huge batch of dinner is one of the best cooking decisions I can make during a busy week. If I have to spend an hour cooking, I'd much rather make 6–8 servings and know that future me has dinner covered. I'm looking for something warm, filling, and satisfying, preferably something that eventually comes together in one pot or Dutch oven. Rice, pasta, or potatoes are always welcome. The big requirement is that it needs to make good leftovers. I'm talking about the kind of meal that you open the fridge and actually get excited to eat again three days later. I'm not looking for soups, crockpot meals, or Instant Pot recipes this time. Nothing against any of them; I just want some different ideas. Some of the big-batch meals I already make are stuffed-pepper filling, lentil curry with ground beef, pork ragu, and roasted pork that I can turn into burrito bowls, tacos, or rice bowls. I especially love meals where the leftovers can become something slightly different instead of eating the exact same plate five nights in a row. So I'm looking for your best ideas. What's your favorite big-batch dinner for two that gives you 6–8 servings and still tastes fantastic the next day? And if it freezes well, that's an even bigger bonus.
